The Cookery Competition allows students the chance to design and develop a competition dish, with the assistance of their Chef mentor, utilizing required and essential ingredients and to compete against Industry Culinary Standards by qualified chef judges supplied by the Australian Culinary Federation.
After a College Master Chef style elimination process between aspiring teams, talented hospitality students Jacob Lessmann and Alex Hall represented St Columban’s at the event held at the Moolooaba TAFE. Against twenty-two other Schools and College’s, the students had a mere one and a half-hours to battle for a spot at the Brisbane Show.
Their dish: A fusion of Spices and Mexican flavours, offering aromatics and a variety of textures, was aimed at attracting the judges attention, coming down to the wire, the boys who were classed as favourites to win by the competition, were humble in defeat, accepting fourth place and a certificate of accreditation on behalf of the Australian Culinary Federation.
